My 1st Meal of 2021

Hello and Welcome to 2021!!! We made it! We did it! We rock! To start 2021 off right I chose to eat healthy while still acknowledging tradition. Double Breaded COD Hot Water Cornbread Greens (sautéed) Black Eyed Peas Chitterlings Mac and Cheese ( ok a little cheat will not hurt)


2 tbsp. oil 1 c. plain meal 4 tbsp. self-rising flour 2 tsp. salt 1 c. water or milk In skillet, put oil, on top of stove, on medium high. Mix all other ingredients, patty or spoon into hot oil and cook until brown on both sides. Thinner patties are easier cooked.

Sautéed Greens

1 onion 5lb greens Season taste Chop onion then sauté in butter. Once onions have caramelized begin to add your greens. Add then let them welt down before you add more. Continue this process until all the greens have been added to the caramelized onions. Once this has step has been completed continue to cook greens until they have reached your desired doneness. I leave mine with a little crush because the more you cook them the less the nutritional value.

Breaded Cod

4 cod fillets Breadcrumbs 2 eggs 1 cup milk 2 cups oil (or more I didn’t measure mine I just eyed how much) Marinate your fillets over night (my marinate consisted of garlic pepper, lemon pepper, citrus pepper, and guacamole I placed all of this in a Ziploc bag along with the fillets mushed it around to make sure all of the fillets were covered then sealed it tight while pushing out as much as possible and placed it in the refrigerator overnight)

The next day Add 1 cup of milk to a bowl the beat in 1 egg at a time Take fillets one at a time and place in your breadcrumbs coating generously then into your egg wash and back into the breadcrumbs set aside. Make sure your oil is hot before you add your breaded fillets. You want them to start cooking as soon as they hit the oil, otherwise they will get soggy and the taste will be ruined and so will all your hard work. Since they are covered in the oil there is no need to flip them. I usually let them cook until they have reached a golden brown.

Serve with dill or buttermilk ranch on the side.
